After completing her undergraduate studies in Political Philosophy at Michigan State University, Jennifer spent two years as a Peace Corps Volunteer in Kyrgyzstan, where she uncovered her passion for public health. Returning to the states, she moved to New Orleans to pursue a Master of Public Health in Nutrition from Tulane University. Now with over 15 years working in the field of dietetics, Jennifer has amassed a variety of different experiences. She has worked in the outpatient field as a dietitian with a pediatric endocrinology practice, as a community nutrition worker for a non-profit food pantry serving clients with HIV, and as a clinical dietitian at a large urban academic institution. Jennifer began teaching at the university level over ten years ago as adjunct faculty at both the Chicago State University in the nursing program and then at the University of Illinois in the Kinesiology and Nutrition department. In February of 2016, she joined the faculty of the College of Applied Health Sciences at the University of Illinois-Chicago, where she has been working with the dietetic intern program.
