Hello Students!

We are excited to announce a brand-new study abroad program open to UIC students this spring: Ecological Farming in the Caribbean: Sustainability at Richmond Vale Academy, St. Vincent.

This one-credit experience led by Chef Renea offers hands-on learning in sustainable food systems, ecological farming, and permaculture, all set on the beautiful Caribbean island of St. Vincent. Students will gain practical gardening and leadership skills, explore biodiversity, and connect global sustainability with nutrition, health, and community engagement. This is your chance to escape the late winter chill of Chicago and immerse yourself in the vibrant beauty of St. Vincent,  a small Caribbean island rich with tropical fruits, ecological farms and villages, volcanic landscapes, and sparkling ocean views.

We’ll be hosting several 30-minute Zoom info sessions where you can learn more about the itinerary, course credit, cost, and application process. Please plan to join the session that works best for your schedule:

  • Thursday, 10/23 — 3:00–3:30 PM
  • Friday, 10/24 — 3:00–3:30 PM
  • Monday, 10/27 — 2:00–2:30 PM
