About

Kelsey Gabel RD, PhD is a Registered Dietitian and Assistant Professor in Kinesiology and Nutrition. She received both her Masters and PhD in Human Nutrition from the University of Illinois Chicago (UIC).  Dr. Gabel has been studying Intermittent Fasting for over a decade and has emerged as a leader in the field.  Her research is focused on how diet, specifically intermittent fasting, may mitigate weight gain and adiposity, adverse effects, and metabolic dysregulation during and after anti-tumor treatment for breast cancer. Additionally, she is also interested in how different modalities of exercise, combined with diet, may improve body composition changes, vasomotor symptoms, and cognitive decline during and after the menopause transition.  As a previous BIRCWH scholar, Dr. Gabel is dedicated to improving the lives of women as they age by utilizing accessible and scalable diet and exercise interventions.
